Chilean consumers are likely to retain a preference for artisanal baked goods, including bread, over the forecast period, due to a combination of perceived higher quality and greater affordability. As Chileans become increasingly attuned to the subtleties of their food preferences, the attraction of artisanal bread is rooted in its exceptional quality.
Retail demand for cakes continues to improve - following the drastic declines of 2020 as a result of pandemic-related home seclusion – now that Chileans are starting to gather once again with greater frequency, thereby boosting sales. In line with the return to greater normality following the removal of restrictions, Chileans enjoy meeting with others for parties and celebrations to mark special occasions such as birthdays and weddings.
Players that mainly produce bread are ramping up their efforts to introduce innovative options aimed at increasing consumer awareness. Notably, bakeries are bolstering their sales strategies by diversifying their selections to include premium offerings, catering for a segment of consumers less impacted by price hikes.

Baked Goods
This is the aggregation of bread, pastries, dessert mixes, frozen baked goods and cakes. Note: Baked goods from in-store bakeries are classified under unpackaged/artisanal, not packaged/industrial. While they may be finished on-site, they are often prepared, then frozen or par-baked, at other locations. Such production models are very important for supermarket in-store bakeries, which have in the past been used to drive traffic and fill stores with appetising aromas, but for which the labour resources required to run a full-service scratch bakery are not always available.
